How Our Meat Boxes Are Put Together
The meat boxes you order online are not a separate product line sitting in a freezer out back. They are a standing list of cuts our butchers pull and portion when the order comes in, which is why the weights are written out to the ounce instead of "assorted steaks."
The brands are named for the same reason. The beef is Certified Angus Beef, the chicken is Springer Mountain, the salmon is Verlasso, the pork is Compart Duroc. Our notes on Certified Angus Beef cover what that grade actually guarantees.
If you want something swapped, call the shop instead of clicking through. We can usually trade a cut for something else in the case at the same weight, and that is a two minute phone call rather than a refund.

One 18 oz boneless ribeye, two 6 oz chicken breasts, two 8 oz salmon portions, two 8 oz boneless pork chops and a pound of our ground beef blend. This is the entry point and the one we hand to people who ask what a box is. Five proteins, one splurge steak, enough range that nobody gets bored by Thursday.
The New Yorker, $119.99
Two 10 oz New York strips in place of the single ribeye, plus the same chicken, salmon, pork chops and pound of ground beef. Five dollars more than the Certified Boneless and it buys you two steak nights instead of one. If there are two steak eaters in the house, start here.
The Butcher's Combo, $149.99
Both of the above, essentially: two 10 oz New York strips and one 18 oz boneless ribeye, with two chicken breasts, two salmon portions, two pork chops and a pound of ground beef. The widest spread we pack that still fits in a normal freezer drawer.
The Surf and Turf, $149.99

The Family Man, $174.99
The volume box. Four 6 oz marinated chicken breasts, two pounds of marinated flank steak, four 6 oz salmon filets, four 8 oz pork chops and two pounds of ground beef. The chicken and the flank come in either chimichurri or Korean BBQ, so tell us which you want when you order.
Beef Lovers, $189.99
Two 14 oz boneless ribeyes, two 10 oz New York strips, two 12 oz Denver steaks, a pound and a half of chimichurri marinated skirt steak, a pound and a half of sirloin stir fry meat and a pound of ground beef. The Denver steak and the stir fry meat are the sleepers here, and they are why it eats better than its price suggests.
America's Box, $100.00
Four 6 oz cowboy burgers, four BBQ steak kabobs, a pack of Snake River Farms wagyu hot dogs, Martin's potato hot dog buns and a four pack of Henri's brioche buns. A cookout in a box, buns included, and the cheapest way to feed a backyard out of our case.
What to Do With a Meat Box Once It Gets Home
Buying in quantity only saves you money if the last two items are as good as the first two, so break the box down the day it comes home rather than the day you need it.
Cook the ground beef and the salmon first. Ground beef has the most cut surface of anything in the box and turns fastest, and fresh fish is fresh fish. Steaks are the most patient thing in there, so they are what goes in the freezer if anything does. Wrap them tightly enough that no air touches the meat, and label them, because a frozen New York strip and a frozen Denver steak look identical in February. Thaw in the refrigerator overnight, never on the counter, and salt the steaks on the way out of the fridge rather than on the way in.

It depends on the box. Most of ours pair a beef centerpiece with chicken, salmon, pork chops and a pound of ground beef, and the exact cuts and weights are listed on each box in the online store. The Beef Lovers box is all beef, the Surf and Turf box is steak and shellfish, and America's Box is burgers, kabobs and hot dogs with the buns included.
How much do meat boxes cost?
Ours run from $100 for America's Box to $189.99 for the Beef Lovers box, with most landing between $114.99 and $149.99. Prices and the lineup change with what we are getting in, so the online store is the live list.
Is a meat box cheaper than buying the cuts separately?
Usually a little, and the bigger the box the better it does. The real saving is the trip you do not make and the week you do not have to plan twice. If you only want the ribeye, buy the ribeye. A box earns its keep when you use all of it.
Can I substitute cuts in a butcher box?
Call the shop and ask. We can generally trade a cut for something comparable in the case, especially if you do not eat pork or want beef swapped for lamb or goat. It is easier to arrange before the order goes in than after.
