The ATL Chop: A New Classic

The ATL Chop is the sandwich people come back for. Ground wagyu raised here in Georgia, onions and peppers cooked down soft, Tillamook cheddar melted over the top, then lettuce, tomato and our fancy sauce. It is built when you order it, not before.

What Goes Into It

There is nothing exotic on the list. It is a short one, and every item on it is there because it does a job.

Georgia-Raised Wagyu

Wagyu is the reason this sandwich tastes the way it does. The marbling runs all the way through the grind, so the beef stays rich and loose rather than drying into a puck. Ours is raised in Georgia rather than flown in. If you want the longer version, we wrote about five ways to cook wagyu at home.

Onions and Peppers

Cooked slowly until they give up their sharpness and turn sweet. Rushed onions taste raw and fight the beef. These are the part that takes the longest and the part you would notice immediately if we skipped it.

Tillamook Cheddar

A sharp cheddar that melts properly instead of going oily. It goes on while the beef is still hot on the flattop, so it runs down into the meat rather than sitting on top of it as a slice.

Lettuce, Tomato and Fancy Sauce

The cold half. Lettuce and tomato give it crunch and cut through the richness, and the sauce ties the whole thing together. Without them you would have something heavier and much less interesting.

Why It Works

A chopped sandwich lives or dies on the beef being good enough to eat on its own. Most are built to hide what is in them under sauce. This one starts with beef we would sell you over the counter, which is the whole advantage of a sandwich counter inside a butcher shop: the same case, the same beef, no separate supply of something cheaper for the kitchen.

What to Have With It

It is a full lunch on its own. If you are feeding more than yourself, ask at the counter about what is ready that day, or take something home from the case: we cut to order, so a custom cut for dinner is a two minute conversation while your sandwich is going.

Come to the counter at 2030 Main Street NW, Suite R204, in the Riverside neighborhood of Atlanta. You can also order online and pick a collection time, which is the quicker route at lunch. Feeding a crowd is a different menu: party trays and larger orders go through our catering menu.
